What to do with used coffee grounds
Spent grounds go on a compost heap, or thinly onto a garden bed around plants that tolerate slightly acidic soil, or in the household bin. All three are fine. The sink is the one place they should not go, because they do not dissolve — they bind with grease already in the pipe and set.
A double shot leaves roughly 18 grams (0.6 oz) of spent coffee. Pull three or four a day and you are producing a couple of kilos a month, which is enough that it is worth having a plan rather than a habit.
What a spent puck actually is
Extraction pulls out the soluble compounds and some of the oils. What stays behind is the plant material: finely ground, damp, mildly acidic, and comparatively rich in nitrogen. Those three properties — fine, damp, nitrogen-rich — explain everything below, including the mistakes.
Compost: the straightforward answer
Grounds behave as a green, nitrogen-rich input in a compost heap, alongside vegetable scraps and grass clippings, rather than as a brown, carbon-rich one like cardboard or dry leaves. That matters because a heap needs both, and a bucket of coffee tipped in on its own tends to sit as a wet, dense layer.
Mixed in and turned, they break down quickly. Paper filters go in with them; if you pull espresso there is no filter to worry about, which is one small advantage of the puck over a drip basket.
Straight onto a bed: thinly, and around the right plants
Grounds can go directly onto soil, and this is where most of the folklore lives. Two things are worth getting right.
Spread them thin. A thick layer of fine, damp particles mats together as it dries and forms a crust that sheds water instead of letting it through — the opposite of what a mulch is supposed to do. A scattering worked lightly into the surface behaves completely differently from a poured heap.
Pick plants that tolerate slight acidity. Roses, blueberries, hydrangeas, azaleas and camellias all take them happily. The acidity of spent grounds is milder than people assume — much of it left in the cup — so this is a preference rather than a hard rule, but it is the easy way to be sure.
The bin, and why that is a real answer
If you have no garden and no compost heap, the household bin is where they go, and there is nothing wrong with it. The point of a knock box was never that spent coffee is precious. It is that the grounds leave the kitchen in one container rather than scattered across a counter or washed into a pipe.
The one place they must not go

Coffee grounds do not dissolve. They clump, they hold onto the grease already in the line, and the blockage shows up months after the habit starts — which is exactly why the two are so rarely connected. A garbage disposal makes it worse rather than better: it grinds the particles finer, and finer particles travel further down the line before they settle, past the reach of a standard sink snake. Espresso pucks versus filter grounds
Worth knowing if you are reading general advice about coffee grounds, because most of it is written about drip and filter brewing.
An espresso puck comes out compressed and comparatively dry — the water passed through it under pressure in under thirty seconds, so it holds less moisture than the loose, saturated bed left by a pour-over. That makes pucks easier to handle and slower to start fermenting, and it is why a knock box works as a container at all while a filter basket generally gets tipped straight out.
It also means a puck holds its shape. If you compost, a puck dropped in whole breaks down more slowly than the same coffee scattered loose, so it is worth crumbling it as you tip. Ten seconds, and it saves the heap a few weeks.
Uses that are half true
Slug deterrent. A ring of grounds around a plant does seem to slow slugs, and the effect is modest and short-lived — rain flattens it. Worth doing with grounds you already have; not worth planning around.
Deodoriser. Dry grounds in an open container do absorb odours, which works precisely because they are dry. Fresh spent grounds are wet and will grow mold before they help anything, so this one requires drying them first on a tray.
Drain cleaner. This is the piece of kitchen folklore that drain companies spend their week disproving. It is the exact opposite of true.
Storing them until collection day
If your compost goes out weekly, you need somewhere for a few days of grounds that is not the knock box itself.
An open or loosely covered container works far better than a sealed one. Sealed and damp is the combination that ferments; a container that breathes lets the surface dry and slows everything down. A paper bag inside a caddy does the job and goes into the compost with its contents. What does not work is a sealed plastic tub kept warm on the counter — that is a week-long fermentation with a lid on it, and opening it is memorable. If a lidded caddy is all you have, keep it somewhere cool and empty it more often than you think you need to; temperature does more of the work here than the container does.
The habit that makes any of this easy
Empty the knock box daily, into whichever of the three routes you have chosen. Spent grounds come out warm and wet, and wet grounds left several days in a sealed container ferment — in any box, in any material. Emptying takes ten seconds when the knock bar lifts out, and becomes a permanent problem when it does not, because grounds work underneath a fixed bar and sit there out of reach.
That is the whole routine: knock, empty in the morning, rinse the bar. Everything above is just deciding which container the grounds end up in.
